Having a lactose problem can be a real pain. But it doesn’t have to stop you from tucking into a steaming pack of freshly grilled waffles. Why? Because you can make waffles without milk! Have a look at the following dairy-free Belgian waffle recipe to make the most delicious dairy-free waffles.

Ingredients

  • 2 cups of all purpose flour
  • 2 tsps of baking powder
  • ½ a tsp of sea salt
  • 4 medium-sized eggs
  • 2 tbsps of brown sugar
  • 2 cups of unsweetened almond milk
  • ¼ cup melted coconut oil
  • ½ a tsp of vanilla extract
  • 1 tsp of cinnamon optional
  • A few spoons of butter or coconut oil to grease the waffle iron

Instructions

  • Using a medium-sized mixing bowl, combine the flour, baking powder, cinnamon and salt.
  • Using another medium-sized bowl whisk the eggs and sugar together until combined. Then add the almond milk, coconut oil and vanilla extract to the bowl and mix thoroughly.
  • Pour the flour, baking powder, cinnamon and salt mixture into the bowl with the dry ingredients and mix. It doesn’t matter if the batter has a few lumps in it.
  • Turn the waffle iron on to a medium heat and grease it with coconut oil or butter. When the oil or butter has started to sizzle you will be ready to add the waffle batter. Spoon the batter into the waffle iron and cook until the edges are firm and crispy and the waffle has turned golden brown.
  • Repeat these steps until you have used up all of the batter in the bowl.
  • Enjoy the waffles together with your favorite toppings.
