Put a pan over medium heat and pour in the olive oil. As the oil heats up add the chopped onions and bay leaf and saute till the onions turn golden brown. Once the onion chance the color, add on the butter, thyme and other remaining spices.
Deglaze the pan using the dry sherry. Then take out the Vitamix and add chopped carrots, mushrooms, chia seeds and pour in the beef stock in the mixer.
Secure the lid and start the blender initially at speed variable 1. Slowly raise the speed up to the highest variable and keep it that way for the next 7 minutes till it the soup is hot.
Add on salt and pepper to taste and add the contents of the pan into the mixture in Vitamix. Give it a spin at variable 2 for 10-30 seconds more and your delicious onion soup will be all ready to be served.
