Vitamix Split Pea Soup

Split pea soup is a very healthy and delicious green soup. It is a very light and flavorful soup. Therefore, this soup is even perfect for the warm and hot sunny days.
In one word, it is the ideal summer brunch soup. The best part is that it is the easiest to make when you have your Vitamix blender. It is only a matter of a few minutes to get the soup cooked and ready.

Ingredients

  • 3 tablespoon olive oil
  • 1 lb split peas
  • 2 carrots chopped
  • 1 onion chopped
  • 2 stalks celery
  • 1 cube of chicken stock
  • 1- quart water
  • Salt to taste
  • Pepper to taste

Instructions

  • In a large pan pour the olive oil and add the vegetables. Stir fry the vegetables in the olive oil for a while. Then add on the split peas and pour in the chicken stock.
  • Add the seasonings and cook them it the peas are thoroughly cooked and soft. After the peas are properly boiled and cooked, pour the mixture in your Vitamix and blend till it is silky smooth.
  • Once you are happy with the temperature and consistency turn the Vitamix off and pour the soup in a bowl and garnish. Your favorite soup is then ready to be enjoyed.
