Try it at home first with the family, then once you’ve done so, tweak the amount of bacon, mustard, salt and pepper to suit you and then invite the whole clan over to sample your masterpiece!
Before you do anything, marinating is the key to making the most scrumptious pork tenderloin. So grab a medium sized bowl (big enough for your pork tenderloin) and mix together the soy sauce, Worcestershire sauce, brown sugar, Dijon mustard and some pepper into the bowl.
Once that is all mixed together, cover your pork tenderloin with the mixture generously, making sure to completely cover the meat. Wrap it up and leave it marinating for 4 - 24 hours before cooking - the longer the tastier!
When you are ready to start cooking after your meat has been marinated, preheat the oven to 350F in fan forced or convection ovens or 390F in normal ovens. Heat an oven proof tray with oil in the oven until hot.
Lay the bacon out straight on a meat preparation board so that the rashers slightly overlap. Use enough bacon to be able to wrap around the entire width of the pork tenderloin.
Heat the oil in a pan that is big enough to fit the pork tenderloin.
Place the pork into the pan and sear for a few minutes or until the pork is browned.
Wrap the pork tenderloin in the bacon. Leave the side with the overlapping bacon bits facing downwards.
Transfer the pork and bacon to the hot oven proof tray and gently pour the honey or maple syrup over the pork making sure you cover all of the meat evenly. Use a spoon or brush to cover the parts that are trickier to reach with the honey or maple syrup.
Roast in the oven for about 25 to 30 minutes.
Check on the pork and bacon every 10 minutes and rebaste it with the honey or maple syrup and sauce that has accumulated at the bottom of the tray.
Remove the pork from the oven and baste it again with the juices then allow it to rest for 5 minutes.
Baste the pork once more before serving, for maximum flavor.
Cut the pork tenderloin into thick slices and serve. Enjoy!
